Various health risks arise from Fusarium, especially for people with a weak immune system.Fusarium spores have an allergenic effect, but the most serious thread is posed by the mycotoxins produced in the fungus. The mycotoxin deoxynivalenol e.g. can lead to renal failure in severe cases. Intake and absorption of Fusarium-infested foods can lead to diseases of the gastrointestinal tract or even to gastric cancer. In the EU there are therefore limit values for Fusarium.
